This has nothing to do with the BIOS. The easiest way is to just reformat your hard drive and reinstall everything.

Reintstall windows. You will get to part that asks you how you want to paratition you drive. Delete all of the paratitions. Then it will turn into just one big space. Install windows onto that drive without paratitioning it into more then one drive.
If you set on paratitioning a drive you can do it later after windows it installed.

DO not format. All you have to do is edit the boot.ini located in the root of the c: drive

Make a backup before you make any changes

boot from the windows install disk.
you can delete partions, make new ones, and format the HD to your hearts content from there.

Well it sounds like you have more then one OS installed on the HD. You probably installed into the same folder and it automated a OS startup list.
You could probably edit the Boot.ini file located on the C:/ drive. You have to be careful of editing the file. The first thing I would do is edit the name of the OS so when it loads up you know which one you want.
Then if you do have double partitions you can install another Windows like 98 on the unwanted XP or Linux.
