For what it's worth, I just got the 2 disc "Best of" He-man at Wal-mart for $5.50. YMMV of course. But it's got 10 episodes and 2 documentaries. That's plenty of He-man for me. It wasn't a particularly good show, but I loved it growing up so I grabbed it for the nostalgia value.

He-Man was a couple years before my time, but it was still airing when I was little, and I know I used to watch it. I have all the sets (except the Best-Of) and think the show is great. Having never watched She-Ra or the New Adventrues, would you guys recommend either show? $20 for She-Ra is pretty tempting right now.

She-Ra is essentially a continuation of the original He-Man. He-Man and the original voice actor appeared in many episodes of She-Ra. I would highly recommend getting She-Ra if you liked the original He-Man.
Not sure about the new adventures. I heard mixed reviews about that.

Besides She-Ra Season 2, Volumes 1 & 2 which are due to come out in the future, there's also the christmas special that isn't on the dvd collections.

Yeah, it was decent. The toyline was straight-up Barbie with swords, but the TV show was basically He-Man with 4 or 5 more girls running around, and the bad guy had a white bone face instead of a yellow bone face. Hordak was the shit though.

New Adventures, from what I've seen (not a lot) and what I read, certainly didn't have the charm or variety of characters the original series had. However, it did have a few things over the original series: continuity between episodes/storylines, better animation, and arguably (at least at times) better writing.
A while back I checked out the he-man.org forums and saw some dude who was the writer for the New Adventures and he talked about what he was going to do if it had gone into a second season, involving them going back to Eternia. It sounded pretty cool and would have actually involved some pretty complex character development for a cartoon. Here's one part I pulled:
What I wanted to do when we brought the series back to Eternia was to have huge changes take place in He-man's absence. Man-At-Arms going to the dark side and ending up as ruler of the planet. Would Skeletor align himself with the new order? Serve at MAA's side? Doubtful. And He-man wouldn't let a dictator -- even a father figure -- rule his beloved Eternia. So what I envisioned was a tri-lateral battle between He-man, MAA and Skeletor -- any similarities to U.S./the former U.S.S.R. and China would have been intentional.
My plan was to have the women -- She-ra, Teela and the Sorceress -- leave Eternia altogether and set up their power base on Primus. But when Primus would eventually be invaded by an alien species -- He-man and MAA would realize they have no choice but to join forces to save them. In leaving for Primus, of course, they temporarily leave Skeletor to his own devices and, naturally, he soon rules Eternia. After He-man, MAA and the women kick some alien butt, all our heroes would see the error of their ways, reunite (can you imagine that climactic scene?) and launch an armada to wrest control of Eternia back from Skeletor and the mutants.
Of course, none of that means anything since it didn't get beyond season 1. It does serve to piss me off that we never got to see it, though.

By the way, that Christmas Special that crossed over all the characters was great. Much better than the Secret of the Sword crossover movie that's on the Best of She-Ra disc. I make it a point to watch it around Christmas ever year.
