Is the A/V and/or the power cable the same? I know the PSTwo has a brick, but I'm wondering about the part that plugs into the brick.

In short, yes.
A/V cables are the same, and short of the 'power brick', the PSTwo power cord is a 'standard 8' - the same as is used for the PS2.

I am near positive that the power cable for the PS2 and the PSTwo are different.

They are different. The original PS2 power cable had one retangular part and one oval part on the end that connects to the PS2(much like the DC power cable). The slim one has one like a Xbox power cable with two oval parts on the end that connect to the power brick.

I'm assuming the Xbox one would work, but I don't know for sure.

I'll check in a minute, hold on.
*Edit- Yep, it does work. Powered on as soon as I plugged it in.
