Ideally, I am looking for something that is light on the graphics (and definitely nothing that I need to download a huge program for).
I'm almost thinking something along the lines of older BBS multiplayer games, you know where you get "20 turns" a day. Something that has the tennents of role playing or character building. Text based is fine. Something that is minimizable with graphics is fine too.
Any suggestions.

Defcon demo or full...has a "boss key"
If I where you, I would NOT play games or screw around on the computer at work. It is most likely the IT department is monitoring your computer. You might get written up for that.
If you still *need* to play games at work, bring a DS or PSP...that way you can shut it off and stash it quickly if you hear someone coming. I don't know if you will be able to use wifi on it (if your office has wifi), but I would suggest NOT using it as again the IT department could see the device on the network.

We used to play Tetrinet (aka Blocktrix) a lot at work (http://www.tetrinet.org/). It is a multiplayer battle tetris game for like 4-5 people. We usually played on the LAN but I am pretty sure there are random servers out there to play on as well.
Subspace (aka Continuum) is another good one (http://www.subspacedownloads.com/). A 10 year old 2d online multiplayer shooter with lots of depth and a variety of different zones.

Any downtime I have at work is taken up by Freecell, Snood, and Mock Fantasy Football Drafts.
We play rounds of speed Freecell for money. Everyone throws in $1, and we pick a game number, say 12,348. Everyone goes to that game, and we do a 'ready-set-GO!' and the first person to finish the game throws up their hands and collects the cash.

Wow, that game looks awesome. It's like a browser version of EVE. Are you in any clan/guild on there? I'll join it if you want.
And I would recommend Cybersphere, as it's a multiplayer text-based RPG. It's basically a post apocalyptic, cyberpunk MMORPG with text: http://cs.vv.com/ I usually played via a Telnet client but it looks like you can use a browser as well. I'm not sure how many people still play, but I imagine it's still active...
The only thing that sucks though, is that it's relatively easy to be killed. And before you start playing, you have to create a unique character and describe his/her appearance, biography, etc... if you get killed, that character is done for, and you'll have to make a new character that is drastically different or the server won't allow it. I remember I spent a good 2 hours making an awesome character, and accidentally typed "North" instead of "South" and I walked off a roof and fell to my death. Damn... was I pissed.
