View Full Version : anybody kno why sourdough bread doesnt go bad so fast??

I had a thing of english muffins for over a week, and looked at them and theyre all turning green! I had to throw them away last nite!
Im like wtf mate the last time I bought english muffins I had them forever and they were still good!
but I remembered last time I had bought sourdough muffins, and I think I knew something like remembering that they do not go molding so fast (or at all)
why that?? anybody know?

It probably had more to do with what kind you bought. If they were fresh from a bakery they probably didn't have any preservatives in them. They would have tasted better at first but they don't last as long that way.

english muffins, if you had them in the standard packaging of the cardboard carton and plastic bagging act like a greenhouse: they trap and hold moisture far more than say just a paper bag. Storage conditions affect how quickly bread will go stale, or in your case, mold.
I don't know the particulars of sourdough bread over other kinds of bread in terms of staying power.

Sourdoughs are typically denser than non sourdoughs, and sourdoughs have a naturally slower rate of growing things.
the higher density of the bread will make it last longer without getting stale.
As for mold, sourdoughs are just as able to mold as other breads, however the container and how it is kept is deciding factor as to whether or not it will mold. Mold grows best in dark, moist, warm environments. So keep crackers in your bread and leave it out of the dark cabinet and your bread won't mold so quickly.
English muffins are typically baked until they are dry, so they are resistant to molding unless you let them collect moisture.

So thats why bread molds on the bottom first... Would rotating the bread help avoid that?

Bread Gnomes can only roam in warm, dark, moist environments...when the bread is just right...then they take over.

:lol: You get a badcase of violent diarrhea or :puke:. You should try getting a jumbo jack at jack in the box and replacing the normal bread with sourdough, good stuff.
