Saucy Jack's Chili Recipe

Ingredients:

3 pounds ground beef (you may add an additional pound or two if you like a meatier chili)

32 ounces tomato sauce (try to stay in the 28-32 ounce range; most cans of tomato sauce are 8 ounces)

32 ounces cooked kidney beans (drain all liquid; canned beans are fine if you cannot make your own; once again, stay in the 28-32 ounce range; most cans of beans are 15 or 16 ounces)

32 ounces pinto beans (drain all liquid; canned beans are fine if you cannot make your own; once again, stay in the 28-32 ounce range; most cans of beans are 15 or 16 ounces)

1 medium onion (diced)

1 rib of celery (diced)

2-4 green chilies (diced; depends on how much spice you'd like)

3 medium tomatoes (chopped)

2 teaspoons Cumin powder

3 tablespoons Chili powder

1 1/2 teaspoons black pepper (double this amount for a tastier, spicier chili)

2 teaspoons salt

2 1/2 cups water (add more water in half-cup amounts if you don't like a thicker-style chili)

NOTE: A great substitute for the 3 tomatoes and the green chilies is to use a canned mixture. Look for "chili-style" canned tomatoes. Chili-style canned tomatoes have chopped tomatoes and green chilies mixed with various spices, perfect for this chili recipe. If you cannot find chili-style tomatoes, use the regular tomatoes and green chilies canned mixture.

Cooking steps:

1. Brown the beef and drain all the grease.

2. Crumble the cooked beef into bite-sized pieces.

3. In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat. Cook stirring every 15 minutes for 2-3 hours.

Could you guys list approximate # of servings for your recipes? The chili one looks like it makes enough to feed a party, does the recipe work for a much smaller batch?

Thanks

I've got so many things I can put in here but since brownies are on my mind at the moment I'll submit the most awesome brownie recipe I've ever encountered ...

Chocolatey Rocky Road Brownies

4 squares (1 oz) unsweetened chocolate
1 cup butter
1-1/2 cups sugar
3 eggs
1-1/2 teaspoons vanilla extract
1 cup all purpose flour
½ cup salted peanuts, coarsely chopped

FROSTING:
¼ cup butter
1 package (3oz) cream cheese, cubed
1 squared (1 oz) unsweetened chocolate
¼ cup milk
2-3/4 cups confectioners’ sugar
1 teaspoon vanilla extract
2 cups miniature marshmallows
1 cup salted peanuts

In a microwave or heavy saucepan, melt chocolate and butter; stir until smooth. In a large mixing bowl, combine the sugar, eggs, vanilla and chocolate mixture. Add flour; mix well. Stir in peanuts.

Spread into a greased 13in.x 9in.x 2in. baking pan. Bake at 350* for 20-25 minutes or until brownies begin to pull away from sides of pan. Cool on a wire rack.

In a saucepan, combine the butter, cream cheese, chocolate and milk. Cook over medium heat until melted, stirring occasionally.

Remove from the heat; stir in confectioners’ sugar and vanilla. Transfer to a large mixing bowl; beat until smooth. Stir in marshmallows and peanuts. Immediately spread over the brownies. Store in the refrigerator. Yield: 3 dozen.

Yes, you can modify the recipe to meet your serving needs. As is, it makes enough for about 12 servings.

If you want double the amount of chili, double the ingredients (for example, 64 oz. tomato sauce instead of 32). If you want half, "half" the ingredients (16 oz. tomato sauce instead of 32). I've personally tested the double and half recipes, and they taste just as good as the full one.

tater tot cassercole- fast, easy, tasty, with lots of room for changing things to taste or to feed more people.

You need:
-tater tots.
-Cambell's cream-of-something soup. I prefer Cream of Chicken. My mom likes Cream of Mushroom. Just be sure it's the cheapo Cambell's stuff, cuz it's going to be a sauce so you don't want the expensive, chunky stuff.
-ground beef.
-If you like, cheese for topping. (I like.)

Cook up the ground beef like you would for a taco (all broken-up like). When it's cooked, mix in the can of soup- don't follow the directions and add milk or anything, just dump the can in and mix it up.

get an oven-safe pan and grease it with cooking spray/butter/whatever. Line the bottom with tater tots. Dump the burger/soup mix on that, spead it out even. Top with a few more tater tots and cheese (if you like.)

Pop the whole mess in to the oven at 400 degrees until everything's hot and serve. (We make 2 big ones that feed 5 people for 2 meals and it heats up in about half an hour.)

Now, if anyone likes, I've got a nice recipe for soft gingerbread too... :bouncy:

I've never had gingerbread before. I'd be interested in your recipe.

OK then! :bouncy:

Techinically, this is my aunt's recipe- and again, this is soft gingerbread- it's fine for cookies, but you won't be able to make a house with this. (This is also the only gingerbread my boyfriend will eat. :D ) That said, you need:

-1 1/2 cups dark molasses
-1 cup packed brown sugar
-2/3 cup cold water
-1/3 cup shortening
-7 cups flour
-2 teaspoons baking soda
-1 teaspoon salt
-1 teaspoon ground allspice
-2 teaspoons ground ginger
-1 teaspoon ground cloves
-1 teaspoon ground cinnamon
-Your choice of frosting

Mix molasses, brown sugar, water and shortening. Mix in remaining ingredients, cover and refridgerate at least 2 hours.

Heat oven to 350 degrees. roll dough about 1/4 inch thick on a floured board. (The flour is very important, it keeps the dough from sticking. I usually flour the rolling pin too.) Cut with floured cutter.

Place 2 inches apart on a lightly greased cookie sheet. Bake until no indentation remains when touched. (That's about 8 to 10 minutes, usually.)

Let cool, then decorate with frosting. Makes about 2 1/2 dozen cookies (at 2 1/2 inches.)

This simple one is probably the first recipe I ever learned. Passed down from my dad who probably got it from Joy of Cooking or something ;)

French Toast

2 eggs
1/2 tsp salt
1 TBSP sugar
1/4 cup milk
butter
6 slices bread

1. Combine eggs, salt, sugar, and milk in bowl. I like to beat the eggs very well seperately then add the milk, then the salt and sugar. But it doesn't really make much of a difference.

2. Coat a skillet/griddle on medium heat with butter. Depending on how hot the griddle is you probably want to get through step #3 fast or else the butter will scorch.

3. Dip bread in egg mixture (I like to just get a light coating on both sides, some like to really soak it.) and place in hot griddle. You can obviously do more than one slice at a time.

4. Cook on both sides until it browns a bit. Doesn't take very long. If you want to really kill the arteries put more butter on the griddle between each flip and at least between each slice.

5. Butter top of each slice and enjoy. You can get creative, but I usually just eat this with syrup.

Oops! I did it again.

I saw this and figured "Well I havent eaten at all today and I like French Toast so why not?" Most of the time I just do the eggs and bread deal but sure i'll try yours. First off, I think the milk is a bit much. I'm no official taste tester, hell, I like Taco Bell if that gives you an idea lol. But it was a bit hard to cook in one piece. Second, the salt kinda overpowered everything. Balance it out with a ton of syrup like I normally do though and it was prrrrty good! Good enough for me any ways. Keep em comin!

Hmm here's one that I like.. good for two people (with some for a second helping). use a good red wine (like a cabernet).. this is KEY.. it doesn't have to be expensive at all, but just try not to use two-buck-chuck. simmer those onions.. take the time to do it right. it smells so good you're gonna want to cry, unless you hate onions, in which case you're going to want to cry also. if you like wine, use a little more, if not a little less. i want to add here, that this recipe is easier than it looks. not too many ingredients and if you get your cheese at a deli (just a few thin slices) this is very economical.

tip for cutting onions. light a candle right by your cutting area. i was skeptical but it really helps!

GOURMET FRENCH ONION SOUP

1 large onion thinly sliced (i use yellow, white is fine too)
couple pats of butter
1 tablespoon all-purpose flour
1(10.5 ounce) cans beef broth (concentrate)
1 cup water
1 cup red wine (cab is good)
2 slices French bread, toasted
couple deli slices of the best swiss cheese you can afford :)

Start working on the wine.

In a medium sauce pan saute onions in butter until soft, approximately 20 minutes. Stir in flour and gradually add broth water and wine. Bring to a boil and simmer for 20 minutes.
Meanwhile, toast French bread slices - you're pre-toasting to make them not soak up the broth so quickly (a little resiliency)..

Fill two oven safe bowl with the broth, float these big slices of french bread on top and cover with cheese. Broil this for about 5 minutes or so - watch it so it doesn't burn. When it's brown and bubbly, its ready. Get oven mitts, don't be a retard. Serve, eat enjoy.

Everyone who tries my hamburgers seems to think they are pretty good, so what the hell.

Take the hamburger meat and make into patties. Then roll the patty in worcester sauce, garlic salt, and seasoning salt and massage it all into it and make a patty again. Then dip it in the worcester sauce sauce again.

I then fry up some onion straws and put them on the burger as well. Also take a skillet and melt a little butter in it and place the inside of the hamburger bun in it and let it toast.

As for the sauce i mix ranch dressing, some hot sauce (not a lot), and barbeque sauce together and put it on the burger as im cooking it.

Take the toasted buns and put the onion straws on it then the burger and top it off with cheese, lettuce, tomato.

Also, here is a recipe for sweet and spicy chicken. Its hella good over rice. Give it a try, its better than a lot of chinese Ive had around here.

Ingredients:

* 1 pound boneless chicken breasts, cut into 1/2" cubes
* 3 tablespoons taco seasoning
* 2 tablespoons olive oil
* 11 ounces jar hot chunky salsa
* 1/2 cup apricot preserves
* Hot cooked rice

Directions:

Place chicken in resealable plastic bag; add taco seasoning and toss to coat. Place chicken in hot skillet with oil and brown. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat, cover and simmer until chicken is fully cooked. Serve over hot rice.

This recipe for Sweet And Spicy Chicken serves/makes 4.

So easy it's sinful.

In crockpot pour four 10 oz. cans (think Campbell soup size) brown gravy
Add 1/2 cup sour cream (light is okay, not non-fat)
Stir in 1 Tablespoon crushed dill

It will look gross at this stage, that's okay.

Add whole bag of frozen pre-made meatballs.
Cook on low for two hours, stirring maybe four times total.

This can be used as an appetizer, with toothpicks, or as a main course, the gravy is good on mashed potatoes. It can also be made and if all is not eaten, frozen with leftover gravy and tossed in crockpot frozen solid at a later date. If frozen, add an hour of cook time.

would taste better yet if you use some kings hawaiian sweet bread instead of normal bread. Heres what im talking about:

That stuff is heavenly alone, better yet in french toast form. I could just sit there watching tv or gaming and just devour a whole loaf of that sweet bread.... mmmmmm bread.
