The series goes:
Resident Evil 1,2,3
Resident Evil : Code Veronica
Resident Evil : 0
Resident Evil 4
Thats in order of release.
On gamecube, 2 & 3 are basically ports of the older PS1 games.
Resident Evil 1, Zero and 4 and in the newer gamecube quality graphics
Code Veronica is only available on the PS2 and Dreamcast however.

What order should I play them on the gamecube?

The Order:
Resident Evil 1 (REmake)
Resident Evil 2
Resident Evil 3
Resident Evil: Code Veronica X (interchangable with 3 since this takes place after 2 and during 3)
Resident Evil 0 (Prequel that makes references to the games listed above... events in this are more significant if you've played those other ones first)
Resident Evil 4
edit: And ukhoops was wrong. Code Veronica is on the Cube.

You got it right on. Gaiden doesn't fit in, same as Metal Gear Solid (Ghost Babel) doesn't.

Technically, the events of RE2 occur within the timeline of RE3. In other words, 3 begins before 2, but ends after it.

thanks man, your post was most helpful! Another dumb q is about how long would it take on average to beat each, with using gamefaqs for minimal help?

Shouldn't take more than 6 hours to beat any of them except 4. Might take a bit longer for CV, even that one is 8 tops. 4 is quite long though, and took me about 18 hours on my first playthrough.

Rei's right. I recall that my first time through 2, for example, it only took maybe 3:30... 4 at the absolute most. They're definitely good games, but they're on the short side. Though I think REmake was actually kinda long... that one and CVX were both like 8 hours.

Excerpted from the RE Wikipedia:
-The original Resident Evil [:Remake for the Cube] revolves around a series of cannibalistic homicides that occur in the Arklay Mountains region, situated north of the fictional Raccoon City in 1998.
-Resident Evil 0 explores the cause of the viral outbreak and Bravo Team's ordeal prior to the events of the Mansion incident.
-Resident Evil 2, takes place two months after the events of the original game in Raccoon City itself.
- Resident Evil 3: Nemesis, takes place around this same time period, and features a similar premise. The game concludes its story by depicting the city's ultimate destruction...
-Resident Evil Code: Veronica depicts the previous games' survivors attempt to expose the Umbrella corporation and sabotage their operations.
-Resident Evil 4 begins with the dissolving of Umbrella Corporation, Set six years after the events of the previous games.

I'm going to disagree with the times suggested. I generally finish games pretty quick, so here are my times.
RE1 remake on Cube is longer than the original RE, it should take you under 15 hours, my second playthrough was close to 7.
RE2 is short if you ONLY play one character, their stories are different and meant to be played one after the other, so about 7 hours for each of their stories.
3 I have yet to play, though I own it.
Code Veronica was also near 15 hours.
RE4 took me 18 on my first playthrough, and 11 with new game + and the tommy gun.
While I may not be the quickest here, 6 hours for RE1 on the cube for a first playthrough without following a FAQ every step of the way is bullshit.

Possible, if you've never played a video game in your life. 15 hours? I don't think so. Not to mention he said he'd be using a small amount of Gamefaqs. Even without it, if you're taking 15 hours to get through that game you must be playing with your feet.
For RE2, I'd say 10-12 hours for both stories. Each one is only like 6 for a first playthrough. The B side is longer due to that extra area in the factory, and the extended ending, but only by about an hour or so.
CV, once again is nowhere near 15. I'll say 12 if you don't like using the run button, and you like to repeatedly watch Alfred miss you with the sniper rifle from like 3 feet away.
