What are your top three beat-em ups for any system or machine?
Mine are:
1. double dragon
2. Guardian heroes
3. Simpsons (the arcade machine) :D

Come on now, you can't forget the TMNT and X-Men arcade games! Those are friggin classics! I remember one day while those were still in the arcades my local arcade had a special one saturday where you could pay like $5 and play as many different games all day long as you want. I stayed on the x-men machine most of the time.

I agree with all the titles mentioned here, so I thought I'd throw out one not mentioned: The Dungeons and Dragons beat-em-ups produced by Capcom. Well, actually pretty much all of their beat-em-ups were fun (even Cadillacs and Dinosaurs) but I think the two DnD titles were their pinnacle.

Final Fight (Arcade)
Golden Axe: Revenge of Death Adder (I think that's the name. It was the one that used the saturn engine at the arcade.)

I would have to agree with the mentioning of Dungeons and Dragons. The two iterations were Tower of Doom and Shadows Over Mysteria (if I'm not mistaken). The first was the better of the two in my opinion.
I recall hearing some mention of a Saturn port of it a few years back, not sure if that fact is legit.
Also on the Capcom note, Aliens vs. Predator has to be quite possibly the best beat em up of all time in my book. Mad crazy depth, just tons of on-screen enemies.
