I have a 'game night' with a buddy of mine once a week and we have been going through a bunch of coop games together but I can't really think of any more. So far we have gone through the Halos, Medal of Honors, Doom 3 and the Ghost Recons. FPS I guess are best but feel free to suggest anything.

Stubbs The Zombie
Mortal Kombat: Shaolin Monks
Baldur's Gate: Dark Alliance I & II
X-Men Legends I & II
LEGO Star Wars
That should get you started. There are really quite a few good co-op Xbox games.

Timesplitters 2 and Future Perfect
Brothers in Arms: Road to Hill 30 and Earned in Blood
Pretty much any Tom Clancy game
Brute Force
Toe Jam & Earl III if you enjoy the series
Unreal Championship 2
Midway/Capcom arcade Treasures/Classics for the old school

If you and your friend enjoy sports games. Try NBA 2k5 or 2k6. Create stupid looking players, use your favorite team and change the settings so that the game wont change you to any other player. It's addictive! My old roommates and I are on our second season doing this. Just pass only to eachother and build up eachothers stats.
- Stubbs the Zombie
- The Warriors
- Splinter Cell: Chaos Theory
- Ghost Recon 2: Summit Strike

Hunter The Reckoning is tons of fun. It's a beat-em-up with some minor RPG elements that controls like a cross between Gauntlet and Smash TV.
I had it sitting on my shelf for months after a cheap EB purchase... then one day my friend was over and I decided to give it a shot. And I was just like WHOA, I've been missing out here. It reminded me of crowding around an arcade machine to play ninja turtles.

Both Hunter the Reckoning games kick ass.
Obscure is a coop survival horror game set in a high school. One player holds the flashlight, the other has a weapon.
