I know on higher end TVs (I have an LCD projection set), that older systems don't look all that hot on them. I tried playing Golden Eye for N64 on it, and the picture just looked like total ass. So much to the point where I couldn't tell between darkness and the bad guys in the tunnel of the very first level. And I was wondering if S video might help that a little? Only other option is to use it on an ol 20" TV I have in my bedroom...

S-video would help the picture quality on any TV.

But the fact of the matter is that everything on HDTVs that must be de-interlaced look like crap unless the TV has a decent upscaler.

The darkness issue is more due to weak black levels LCDs tend to have in the first place. I'd suggest adjusting that input's contrast or brightness levels, or the brightness levels in the game if there are options for it. TVs calibrated for movies tend to be set somewhat dark as that provides optimal viewing experiences for them.
