I just finished getting my N64 game cases printed and put on my shelf (thanks jkam!) and I have room for one more. Looking ay my list below if you could add just one more game to it, what would it be?
Banjo-Kazooie
BattleTanx: Global Assault
Conker's Bad Fur Day
Donkey Kong 64
Dr. Mario 64
GoldenEye 007
Jet Force Gemini
Kirby 64: The Crystal Shards
The Legend of Zelda: Majora's Mask
The Legend of Zelda: Ocarina of Time
Mario Kart 64
Mario Tennis
The New Tetris
Paper Mario
Perfect Dark
Pokemon Stadium
Snowboard Kids 2
Star Fox 64
Super Mario 64
Super Smash Bros.
I don't play this with a lot of people anymore, so party games aren't the best idea.

Excitebike 64 and Blast Corps were both good N64 games.
EDIT: Waverace 64. Forgot about that one.

Awesome collection, I share many of the same titles that you own.
If I had the money and patience, I'd definitely go for the import Sin and Punishment.
For American releases...well, I had fun with the Bomberman games. Their single player modes are still interesting, and the game's better when I play with friends. Also, 1080 Snowboarding is a nice, cheap, excellent game.

I have to agree with Excitebike 64.
Also Wave Race is a blast and F-Zero X is fun too.
If you like platform games, look for Rayman 2 or Rocket: Robot on Wheels

I loved Banjo Kazooie, so I suggest Banjo Tooie...
Mystical Ninja Starring Goemon. One of the greatest and funniest platforming experiences of my life. Plus, it has GIANT ROBOT BATTLES!!

If I'm going to be playing it for the first time, will No Mercy be able to live up to the hype?

It was a great game back in the day, still has the best story mode of any wrestling game (seperate, branching stories for every belt, which advance differently regardless of whether you win or lose (sometimes you are forced to win, though), however, it does feel incredibly slow compared to the current-gen games, especially the Day of Reckoning series on Cube. Still worth playing if you never got to it, though.

Pokemon Snap
NBA Hangtime
WCW Revenge (best n64 wrestler imo)

That was Beetle Adventure Racing, close enough. Great game. Anyway, I suggest Excitebike 64. I put a LOT of time into that game.
Harvest Moon 64 kicks ass, even though 'Back to Nature' on PSX outclasses it.

Buying a used copy of it wont help, and not only that, but the first game sold great in its day, though the Pokemon license cant just be slapped on to anything nowadays.

Vote in for Mischief Makers or F-Zero X.
Do you need to know Japanese for Sin and Punishment?

I think so. The roster will be slightly out of date but the roster is still great and the Create-a-Wrestler mode is pretty robust so you can create most any other wrester you can think of. There are som moves that can't be done like the F-5, the 619, etc. But in general you have a wealth of moves available. The game does play slower than current titles but the gameplay still feels more solid than anything that has ever been released IMO. The sounds are not up to par to current titles due to the cartridge format. You should be able to find the game very cheap though and it is still my favorite wrestling game ever. The single player mode has enough meat to keep you busy and when that dries up the Royal Rumble mode is good for a quick gaming fix.

I would go with Shadows of the Empire or Pilotwings. Only other games not on your list I played a ton of when I was younger.
