Provide a pic, if appropriate. The nomination can be for artwork or functionality (accpets cards, joysticks etc etc).
#1 Afterburner 360 Cabinet (cost around $5 back in the 80's - had an attendent!! crazy) Yes, you did strap in and rotate in 360 degrees.

#2 Space Gun - I own this, it's in my living room. Fucking awesome cabinet. When you light it up it glows. Mine has foot pedals, too.

My vote is for the "Whammocade" - a scratch built cocktail with a 27" monitor or the "Neon MAME" - two people over at byoac built them and they are by far my favorite cocktail and upright cabinets.

Oh, they have DOT at the Santa Cruz Boardwalk! It's SO awesome! I like the fact you have to stand in it.. very different style than most other cabinets. It almost "teleports" you into the circuitry!
The sound in that cabinet is very advanced too.

It might not even classify as an arcade "cabinet," per se, but F-Zero Monster Ride is just badass.

I also want to mention The Lost World: Jurassic Park Special (http://img49.imageshack.us/img49/9839/lostworldspec2oe.jpg) and The House of the Dead 4: Special (http://img181.imageshack.us/img181/8727/hotd4dead4sp1ya.jpg), Namco's Galaxian 3 (http://img181.imageshack.us/img181/2148/galaxian31dw.jpg), and a few other special games, which aren't so much cabinets, as they are small buildings. They're badass. HOTD4 Special, for example, is a fairly large, fully enclosed room into which 2 players enter, buckle into the chairs, and are surrounded by 2 100-inch screens on either side, and are blasted by air jets when they're hit by bullets in the game, and the chairs shake and it's got super loud sound and the whole thing is completely fucking CRAZY.

Ahhh... nothing more fun than going to Dave & Busters with a bunch of friends and playing some drunk driver. I remember one night we were addicted to playing Rapid River - the game sucked but the controls are hilarious and a must-play with two people.

SEGA Hang-On Ridable, with the full-size Red plastic Bike and the video screen in front of the handlebars. Amazing.
Only one place I ever saw one, most had the stand up or the ridable with the small bike protruding out from the upright cabinet...but the full-on red bike version was trick.

Afterburner, while a motion simulator, didn't rotate 360 degrees. I think you are thinking of R-360.

Ah, I think you might be right. (I was all of about 8 yrs old when this came out.. and we all know how well juvenile mind serves)... hmm. I want to see some screenshots. I recall it looking just like afterburner (?)...

One of my all-time favorites is for a reason other than appearance. The Q*bert cabinet had a solenoid built into the cabinet. This was the same unit used to make the free game noise on pinball machines. When Q*bert fell from the pyramid the solenoid went off to announce when he'd hit the botom of the cabinet. since it was closer to the player than it would be in a pinball machine, the noise was quite loud. I mean really LOUD on the early units. It would really scare the crap out of unsuspecting first time players.
You'd have to use a metal joystick with 50,000 volts flowing through it at an unexpected moment to do better.

The last time I visited a few years ago, Castle Park in Sherman Oaks, CA still had theirs.

The Q*bert knocker was awesome.
