Beat some games, got cocky, and got served some humble pie. Now what?

I must say it feels most satisfying to complete a game. Considering the size of my backlog and my short attention span I actually find it difficult to play through a single game. Looking at my trophy card or gamertag alone shows a myriad of titles that have yet to be completed..
Last Friday I realized that my semester off will be finished in a little over a month. I decided to push myself a bit, since my summer and fall semesters will be quite busy, and try to stick to a single game. I chose Resident Evil 5. I previously played the first three chapters co-op with my buddy shadowsaber on the , which left me like a junkie wanting to play more. I was a little reluctant to start from scratch on the , but those doubt quickly faded and I ended up beating the game in about a day and a half. My only gripe is that while playing through a second time as Sheva I noticed that computer controlled Chris is quite incompetent. Perhaps trying to sharpen some unknown psychic skills he quite often stares at breakable boxes and crates, and seems to find immense joy in standing in front of my while I am attempting to aim (especially against mid-bosses with instant kills). Those issues aside I immensely enjoyed the game overall. I have yet to score the coveted platinum trophy or dive into the mercenaries mode, which Iím eager to give it a try, but I think Iíll wait and play through it the first time in co-op. Then, Iíll see if I can place a high score with a character other than Midnight (Neo) Wesker.
After my triumphant completion of Resident Evil 5 I decided to show my some more love, and play Resistance 2, which has been on my shelf since Black Friday. Although nearly identical to its predecessor, I enjoyed the game and found myself finishing in with a day and a half. Although, I did however dislike that on the rare occasions when you have computer controlled allies many times the enemies will swarm straight towards you. The allies following in reciprocal by not firing upon swarm. Also, I did experience some glitches, which I assume have been resolved by the 1.5 update, but having waited 9 hours to update my firmware (142MB) I was not in the mood to download a 347MB patch.
Having completed two games within the span of three days I find myself in a conundrum. Today I played through a couple levels of Star Wars the Force Unleashed on Sith Master difficulty, but found myself unengaged in the game. I switched over to Viva Pinata on a whim, it being shelved about 18 months, I found myself lost on what I was supposed to do to expand my garden. I played that for about an hour and switched to Chessmaster Live. After defeating the computer I got a little cocky and decided to take on a significantly more difficult opponent, and got served some humble pie. So, what do I tackle next? After some careful consideration I narrowed it down to five choices:
Persona 3 - Iíve put ~95 hours into the game and almost reached the end, then got distracted by something >_>
Valkyria Chronicles Ė I thought the demo was phenomenal.
Bioshock Ė I really want to play this again. Although Iíve already played through it twice on the
Dead Space Ė Stopped on chapter 2 of impossible mode.
Onechanbara: Bikini Samurai Squad Ė Some simple hack and slash zombie slaying.
