So...could one theoretically get the Xbox 360 + Madden bundle, then return the items but keep the Target gift card?? Also, are there any coupons I could stack on to get even cheaper MS points?

No, they usually take $40 off the price of one the products and charge you the difference for the gift card, to prevent the scenario you are suggesting.
