GGs to Guardian today in MVC3. I'm thinking of dropping Doom because I just don't feel comfortable enough with him. He's just too awkward. I played with Jimbo Sunday and he said Doom is probably my weak link right now.
My replacement options right now are Akuma (which is what I was testing today), Dante (Weasel shot), or Iron Man (Unibeam). I'm basically looking for someone who has an assist that can extend the other character's ground combos and also create openings. I'm afraid I'm going to have the same problems with Iron Man that I did with Doom, and I don't think he's a viable anchor.

Well, I'm generally against having an assist only character on a team. Not to say it's a bad strategy (see Tron), but you shouldn't feel helpless when a character gets snapped in. You should probably either practice a lot to get more comfortable with Doom or pick another guy to even out the ranks.
The biggest issue I noticed you have is taking advantage of your approach options and knowing when to call assists. This is really the same issue that Gootecks has on Marvelous Adventures. Wolverine is so mobile that you should be either dashing in with an attack or putting me in a blockstring as Doom comes out with Plasma Beam. That's really the ideal situation because you can basically do whatever mixup you want on approach when I'm locked in. If Wolverine (or any point character) is crouching and doing nothing, but not in blockstun? You're doing something wrong. You should be pretty much constantly moving.
Ultimately, I'm a big proponent of picking a character you have an affinity for and making them work for you, unlike the other way around. If you like Doom, you can learn Doom. Iron Man's options are limited, but he still has plenty to work with at the level we're playing at. I really believe that every character is viable in this game right now (perhaps more gimmicky in some cases). The ONLY condition for a team is that you have OTG/DHC options... but you already have those with both Wesker AND Wolverine. Is a beam approach option assist great for a team? Yes. But I don't really have one on my main team (Dante's Weasel Shot has limited applicability and mostly works in cross-up situations), and I do okay for now. I think it ultimately depends on your gameplan, and what strengths you want to enhance with your assists.
Even taking a look at your current team with Wolverine and Wesker. Doom's probably your weakest link, I agree, but are you fully comfortable with Wolverine and Wesker? And also, they're both very strong characters, but do they complement each other as well as other possible combinations? Honestly, Wolverine and Akuma are pretty much BFFs right now in MvC3, as they work together perfectly. Maybe start using those two and adding a third character that can mix things up. Maybe Haggar with lariat assist for offensive shutdown. You'll never know what works until you try.
I really think that you'll start getting stronger in the game if you focus on a few characters and their team dynamics in training mode. If you keep switching teams, you will only touch the surface of what your team is capable of, and you'll never be fully comfortable. Unless you're using Wolverine. Everyone's comfortable with Wolverine. Just take some time in training mode to get comfy with approach options and how your character moves.
