To be specific, they are two-disc special editions.

Disc 1 has the regular widescreen anamorphic 2004 editions of the films. Disc 2 are non-anamorphic widescreen transfers of the "unaltered" versions based on the 1993 laserdisc versions.

No, it's letterboxed 4:3 video. Watched on a standard def 4:3 set, it will be letterboxed. It's only pillarboxed if watched on a widescreen set.

The best way to describe it is non-anamorphic widescreen. It's still in it's 2.35 aspect ratio, but it's not anamorphic video, so zooming it on widescreen sets would be the optimal way to view them.
