Milk substitute for pudding?

Does anyone have some good suggestions here? I'm honestly wondering what would appropriately mimic milk for this since I've tried to use Soy which has a shitty boiling point plus it doesn't curdle at all or anything near it rather.
 
I'm always watching my carbs, so I eat sugar-free pudding sometimes made with half heavy cream and half water. Comes out pretty good.

Why can't you use milk?
 
Coconut milk can be worse than cow's milk as far as the bm factor goes.

Common milk substitutes besides soy are almond, oat, and rice.

I'm speaking specifically in pudding though because Soy doesn't seem to set up like milk does when you heat it. I don't know about Rice, Oat or Almond but I have the feeling the same thing will happen.
