I think mine with the black scroll shipped no update on Walmart's site but I had a new shipping label get created this afternoon (and it's since been shipped), being sent from "COKeM International" (which on their website, Nintendo and Walmart are listed as partners/clients).
My Walmart order...
Which is just super annoying in this day and age isn't it?
Luckily for me, my Zelda CE package is at the major USPS hub 20 minutes or so away from my local post office, so I should actually get that order tomorrow.
My other Gamestop order (coming FedEx) updated today to say it's Scheduled...
If it doesn't show up in FedEx notifications, might be sent via USPS.
They shipped my Zelda CE via USPS apparently per my informed delivery notifications.
Charge for my Zelda CE showed up on Monday, while the charge for the Amiibo showed up today. Both orders are in the "Preparing for Pickup on Friday" stage on Best Buy (though the pre-order bonus Art Print is in "We'll let you know when it's ready" stage).

Nice Best Buy Switch and SE are ready for pick-up -- but the Amiibos (which have been in-progress for at least a week) aren't yet.
Not overly concerned about them though, was a little nervous about the SE since I got in on that towards the tail end of their availability.
Sounds like you guys might need to go the digital route with your books. Did the same myself a year or so ago after swearing I never would do it, but just ran out of space. Now the only new physical books we pick up are special or collector's editions, or if they hold a sentimental value.
