I am pretty sure that if you did not have one in the phone, you would not be able to use the phone. There would be a message saying insert the sim card.

You should be able to use your old Nokia charger, though it might take a little longer to charge depending on what type of charger it is. If it is a 7U it will take a bit longer than a 12U. The 12U is the type that comes packaged with the N-Gage. Edit: Ashram beat me to it :)
