Someone help me understand - why are people with 100+ feedback sending first with someone who has 10 feedback? That seems like asking for trouble. If someone with that low feedback demanded I send first, I would pass, no matter how good the deal seemed.

Every trading post is going to have its bad apples. Follow the rules, look at reputation, and if something feels off, then don't do the trade. That will minimize any issues.
