Okay, I got a couple things to note. First of all, though I can get information about exactly what amounts specific stores are getting, I'm not going to so don't ask. I'm not going to say from what region/state this info comes from either. Also, Best Buy's system still does not show any PS3 consoles on order so I have no information about it. I didn't bother looking at PS3 accessories.
Wii console:
You may recall a Kotaku article that said Best Buy's system showed an "In-Stock Date" of 10-29-06. Well, it's been changed now. Best Buy's system now shows an In-Stock Date of 11-19, and anyways, even if it still had the wrong date it wouldn't have mattered. It doesn't really have an effect on when Nintendo ships their product to Best Buy or when they would be allowed to sell them.
Okay, so the stores in my region showed either 24, 45, 63, 84, or 102 Wii consoles "On Order" with 45 and 63 units being the most common amounts. Obviously, smaller and/or lower sales volume stores will be getting less than higher sales volume stores. I believe that the amount shown as being "On Order" is an accurate description of what each store will be receiving for launch day, but that could change. In any case, that's the way it was with the 360 last year. I have been told that stores will not hold any Wiis or PS3's back for Black Friday sales. So, assuming that's true, don't worry about that.
Acccessories:
Only Nintendo brand accessories showed any amount on order. All other 3rd party accessories showed 0 units on order. That doesn't mean they won't have them on launch day though. It just means that I have no idea how many there will be.
Nintendo brand:
Wiimote - $40 - stores are receiving 15-55 extra Wiimotes. Aside from the fact that smaller stores are ordering less, there doesn't seem to be an exact logic to the amount that they are ordering. For instance, one store that's getting 63 consoles may have 35 extra Wiimotes, and another sotre that's also getting 63 consoles may have ordered 45. What I can say for sure is that no store will have anywhere close enough Wiimotes so that every customer can get two. So get in line early!
Nunchuk - $20 - This one's even worse. Each store is ordering nunchuks in about half the quantity of extra Wiimotes they'll have, as few as 8, and the most I saw was 27. So for instance, there's one store that's getting 102 Wiis. They'll only have 55 extra Wiimotes and 27 extra Nunchucks for purchase.
Classic controller - $20 - This one is really bad. Stores are either getting 4, 8, or 12 classic controllers.
Wii Points - $23 - Stores will be receiving only 8-22 Wii Points cards. The item description did not say how many points the card is worth (I assume 200), and there is only one type of card (i.e. it only comes in one denomination).
BD & A (This is the "Switch 'n' Carry" brand, the same brand makes those accessories you can pick up at Target right now):
SD Cards: 2GB - $100, 1GB - $60, 512MB - $40, 512MB + "Wii Protection Kit" - $50 --- I don't know what a "Wii Protection Kit" is. Also, the item description actually described them as Memory Cards, not SD cards. I'm just assuming that they must be SD cards.
Also, it seems like Best Buy is going to have all of the same accessories that Target has right now, but some may be different packages. For instance, they had 2 Wiimote gloves for $20 (Target has a pack of 3 for $25). Of course, Best Buy does not have those Wii Dog Tags or the TIn & Magnets. They're Target-exclusive collectibles.

"React Wii Component A/V Cable" - $24 (My best guess is that this is actually a composite A/V cable, but then why would it cost more than S-video?) Maybe the $60 one was just a placeholder entry.

Wii Digital Informational Catalog - FREE - Stores are receiving 50, 75, 100, or 125 of these. I wonder if by "Digital" it means that it's a disc, maybe even a Wii disc. That would be cool.

Pay attention to the On Order numbers because many of the games are going to be in small supply. I didn't check all the games. I mostly checked the games I was interested in. Many of the 3rd party games show zero on order right now, anyways.
Wii Sports - $50? - There are two SKUs for Wii Sports in Best Buy's system. One has a Status of Deleted, the other is Active. I think they're just place holders. No store has any on order.
Zelda - 24-92 on order. You should note that every store is getting almost, but not quite enough copies of Zelda to achieve a 1:1 ratio with the amount of consoles their getting. The exception is that stores that are only getting 24 Wiis are also getting 24 copies of Zelda. However all of the other stores will have almost, but just not quite enough copies so that every customer can buy it if they want. Don't be last in line if you want Zelda!
ExciteTruck - only 18-40 on order per store. Most stores are getting enough so that roughly half of Wii purchasers can get ExciteTruck.
Monkey Ball - I forgot to check multiple stores on this one. The store I did check this for is getting 63 Wii consoles but only 22 copies of Monkey Ball.
Trauma Center - each store has either 18 or 24 on order, even the "big" stores.
Red Steel - 18-40 copies, like ExciteTruck.
Rayman Raving Rabbids - This one is terrible, each store only has either 8 or 10 on order -even the stores which are going to have 84 or 102 Wii consoles. Again, getting in line early could be important!
All games showed a price of $50. It should be noted that Ubisoft's online store had Rayman for $40 before, but I just checked and now it says $50.
