1. "Rooftop" (Def Jam: Icon) - Sending the opponent in the air with a well-timed helicopter-tail whiplash never gets old.
 
Agreed on the Prypiat level in Modern Warfare. I played the game not knowing much about the real-life city, then later I watched a documentary on television that showed footage of the city, and I was just overwhelmed with the feeling that I had been there.
 
I forget the name of the level, but there's a part in Castlevania Lords of Shadow where you're crossing this icy rock bridge and the camera pans out to show you the huge environment and an ice covered castle. I was WOWED by that and just stood there looking for a couple minutes. I think Castlevania is probably one of the better example of levels I have seen in a few years.
 
Singleplayer:
Final Fantasy VII - Shinra Building

Klonoa 2: Lunatea's Veil - La-Lakoosha
Cave Story - probably Grasstown (aka Bushlands)
Every casino level in every Sonic game I've ever played, especially the NiGHTs Pinball sub-level from Sonic Adventure.

Multiplayer:
Unreal Tournament - Facing Worlds (I have many fond memories of playing this map with friends. Also, a little surprised that I'm the first one to list it)

Just like panzerfaust, anything from CS were just too good.

MP levels from Socom 2 are still the best in terms of objective based. If CoD could just carbon copy maps from CS and Socom, oh god it would that much better. LETS THE fuckING COMMUNITY MOD MAPS!

Honorable mentions:
-Twisted Metal 2 New York (roof jumping at its finest)
-Shadow Moses
-Train section in Uncharted 2
-Church in Uncharted
-CoD4 (god there is so many)
-CoD SP Russian campaign where you start off with no rifle
-Secret Cow Level in Diablo 2
 
MGS4 Act 4: When you revisit Shadow Moses island. Lots of fun nostalgia.

I would have picked COD4 Gillies in the Mist as well if not for the fact that the finale of that mission pissed me off to no end.
