Because I already beat 7, and I didn't like it. Mediocre story, sexual tension between Cloud and Sephiroth, and way too much hype. Add to the fact that nobody wants to shut up about how Aeris dies. She wasn't even that good of a character, gameplay or storyline-wise. Besides, the only reason anyone cries "orgasmic" over FF7 is because Cloud is a whiny, emo bitch who can't even save a stupid flower girl from a guy who's falling 5 mph into her spine with a sword. You call that one of the "best scenes in a game?" I call it an easy way to erase a mistake someone made early in development.
From what I've played, FF6 is a damn good game. I think it's because of how they went kinda Pulp Fiction on me and told me everyone's backstory before they actually let me "truly" use everyone. The only bad thing in this game is Gau. I don't like fighting with him, but I am a little interested in some of his story. I like FF8 because of the Junction mechanic. Sure, it's boring as hell drawing loads of magic from an enemy, but the payoff is worth it when you're slapping bosses for 5000+ damage and you're not even at the endgame yet. Plus, Quistis is smokin' hot.
FF9 was my favorite FF, again because of the story, the good character designs, and the crystal system. Plus, I liked Zidane out of spite to Cloud, since they're pretty much polar opposites in terms of personality. It felt good playing as a guy who was as happy about kicking someone's ass as I was.
FF10? Well, I'm not the biggest fan of that one.
