Good reason to use two servers?

Not sure I understand the concept. Only reason I can think of is decreasing traffic to one, but you would still have to use the same cable and a switch. Wouldn't a single server work just as effectively?

Any insight?

Depends on what your running.

If your just running a website then no. If your running a site and have a forum that gets mass traffic then giving the forum its own server would be a good idea. Or if you have a site that hosts a shitload of content to download then a server just for that is a good idea.

I dont know, it all depends on the site, what your bandwidth is and what kind of hardware your using.

It's a hypothetical LAN consultation for a business.

100 users, no bandwidth info; I think for simplicity's sake, I won't go into the two server option unless there'd be a great reason to add it into the plan.

For the business you described - One server should be more than sufficent. For games and such multiple servers are ideal. Sometimes, I have multiples servers up and running for practice purposes...learning a new server OS and/or game commands for a game I wish to host.

It also really depends on what you're planning to run on these servers. Some programs need to be run on its own hardware or VM or else it would use up all the resources of the server, slowing down anything else using the same resources. However this is always something that can be fixed later if one server doesn't suffice.
