(OOS) Xbox 360 availble at Amazon.com ($999 for the bundle)
People would really spend $1000 for a bundle with a non-premium system?
Apparently not, that's why it's in-stock.

I've been saying that every since this bundle came back in stock. But I remember gamestop had a $2000 bundle and it sold out so I guess people would spend anything to get one.

no, people will pay $1000 plus:

Two months of rentals from Gamefly.com, a one-year subscription to OXM
Kameo: Elements of Power, Project Gotham Racing 3, Perfect Dark Zero: Limited Edition, Quake 4, GUN, Call of Duty 2, Tony Hawk's American Wasteland, NBA Live 2006, Tiger Woods PGA Tour 2006, and Ridge Racer 6
additional Wired Controller, 64 MB Memory Unit, faceplate

i haven't done the math, but it SEEMS like an okay deal...

People would apparently put their mother up as collateral for any 360 hardware, so the answer is, yes. Worst case you could eBay the console and whatever bundle items you don't want for quite a few hundred dollars, and wait for a premium to pop up.

If I up the quantity in my cart to 2, says there's only 1 available. Would that be because it's limit 1 per person, or there's really only one left?

You're missing my point.. unless you're actually saving money on the bundle deal.. its absurd to lay down that sort of money and only get a core system. It's not a good deal if you're getting the substandard product.
You gotta be kidding me, now it says its OOS. I guess people would pay $1000 for a core system.
Rich soccer moms with 8 year olds.

Im not sure how to classify this deal as being "good" or not. Not adding the peripherials the games together already cost $600 + $300 for the system puts you at $900. You'd be saving some money by getting this instead of if you bought all of these seperately but its not a lot.
thry also have premium bundles. were they available today, too?
I checked and they all still say not availble. Was hoping for one of the premium bundles to be stock also might have bought one.
