I'm wondering about that myself. Do you just enter the once and have 21 chances to win or do you have to enter eveyday?

According to the rules:

Limit one entry per day during the sweepstakes period per person/e-mail address.

However, also according to the rules, it looks like all the entries are pooled and the winners are drawn on December 31st (despite the contest name implying there's 21 Wiis given away daily).

So, you can enter once and you're good -- you'd have one entry for the whole contest. Or you can enter once per day, for a total of 21 entries.
