I forget exactly how I came upon this, probably started with a Google search and branched from there. Anyway, it's an interesting form of sugar. It technically is a type of sugar, occurring naturally in dairy products. However, due to it's structure, most of it is not absorbed by the human body (can't be digested in other words) so it has very little effect on things like insulin, and it's very nearly as sweet as normal table sugar, plus you can actually bake with it because it caramelizes. The problem is that it hasn't really broken into the sweetener market due to other already established alternatives.

It can be purchased from places like NuNaturals, but it's expensive. From what I've read though, most people cannot tell the difference between this and normal sugar. I think Pepsi has even used it in some things, 7-11 was supposed to have had a Pepsi slurpee that used it. I Don't' live near one so I can't say.
