If I've been using the 500GB and want to expand now, does it transfer all saved games and profiles to the external automatically? Or does it start only from everything after the external is connected and leaving old info on the internal drive?

Also, if I change consoles in the future, does it transfer the info from internal and external hard drives?

 
Default will continue to fill up the internal and then switch to the external.  You can, however, tell the Xbox to d/l to the external.  If you want to move things from the internal to external (or external to external), you will have to manually move them.

 
Since saves are cloud-based and synced locally to the hard drive, it should be a matter of swapping from the old XB1 to the new.

There is one piece of advice I can give. Do not use an external that isnt powered by the console. I have a WD 2 TB that I got for $40 at walmart last year. It will usually wake up with the console but if I dont use something that is on the drive after a few hours it will cut off, I have to either get up and unplug and plug in the power for it and then reset the system or sometimes just reset the system (going to power options and reset). with my usb powered 1 TB I had no issues, it always worked except one day during a bad update from the preview.

That's bad advice. Best you're going to find for USB-powered drives is the 3TB WD Passport Ultra. Drive powered by an external AC adapter go up to 8TB.

I have a WD 4TB My Book and it's worked flawlessly for over a year without any issues. AC powered drive as well.

Move everything to the external drive and tell the system to use that as its download location, issue solved. The drive will always be used and won't go to sleep until the system powers off or does nothing for quite some time, even in low power mode.

 
Just saying my personal experience with the 2tb model I have. Its been a pain in the ass since I upgraded. It could be an issue with this model. it is a wd mybook. I have friends who had similar issues but we did all use the same drive. glad to see your is working fine, i assumed it was either an issue with the beta os or the drive. i have everything set up that way but i moved hulu and netflix back last week because of the issues. so i would just change mine to avoid the older (produced before 2015) WD 2TB My Book then.

I think I have the same drive, working flawlessly for me too.
