What sort of secret spice or sauce do you love to add that really creates a nice surprise to whatever you're cooking?

Me, I'm a huge fan of using Ponzu in stir-fry, it really brings out the taste of vegetables like green peppers, among other vegetables.

Additionally, this time around I'm going to ask the same question of the secret ingredient above for Thanksgiving.  Do you brine your Turkey, roast, fry?  Do you go Turkeyless and Vegan, with a main dish and ingredients no one would suspect?

I'm a noob when it comes to cooking, so my strategy is to throw in a little bit of every spice in the cupboard that sounds good.  Sometimes it works.  Generally not.

 
I use Adobo on all the meats that I cook.  Goya brand I believe, it can be found around the Taco Shells at the store.

 
I know a few people that add jelly to their chili. Says it makes a big difference. I thought they were nuts but apparently April Margera (big CKY/Jackass fan here, bought her cookbook) also does the same thing with hers.
