I'm guessing it's because with most of these titles there is a GotY type edition right around the corner.
Literally, none of these games will have a GotY edition aside from Need for Speed Payback these are all somewhat older games. Burnout Paradise and Dead Rising 4: Frank's Big Package already included all the DLC for those game and Monster Hunter World has free DLC so there is no need for a GotY release.

Would’ve bit on Megaman Legacy 1 and 2 if it was all on one cart, not doing a download code for content that would easily fit on a cartridge.

I don't know if I'd call it unplayable – I picked it up never having played one before, it's interesting. But yeah, as someone without other people to play with, I've gotten to about the Legiana fight (roughly 5 fights from the end of low-rank) and my interest is starting to wane a bit. I think it would be MUCH more fun playing with other people, even just randoms (I don't have PSPlus), but it's still an interesting game and I've enjoyed it mostly so far. Bear in mind if one playstyle gets boring for you, there are several different weapon types, so all you need may be just a change in weaponry.

If you DO have PSPlus, then I don't think you really need IRL friends to play, I haven't read too much about trolls/griefing, so you'd probably be fine.

I played through a bulk of the game as single player without any problems. Some of the very later missions get extremely tough to solo though depending on your play style and are played best with other players. The good news is that finding other players is super easy and there you can find a group of randoms at just about anytime to help you through your missions. You can occasionally be grouped with people who are very bad and cause you to fail the mission, but that is fairly rare in my experience.

Yesterday at BB Ni No Kuni 2 was 39.99, but today I see it's dropped to 29.99. I realize it's cheaper this week at Amazon and Target, but just posting up for anyone that needs to get it from BB.

I think Ni No Kuni 2 had a universal price drop. I picked this up used with some credit I needed to burn on a B2G1 awhile back and haven't touched it, crazy how quick this game has dropped. I see the CE all the time for like $60.

I actually found most of the hunts to be easier playing solo rather than with a group, with a few exceptions. Each additional player scales the difficulty, and does so as they join. Totally agree that grinding solo is a pretty dull experience, though.

For example, I've never beaten a Tempered Kirin hunt in multiplayer - Which, admittedly, is because most people aren't prepared for the mechanics and get one shotted, failing the mission for everyone. On solo, though, I can clear it no problem.

 
FWIW, Burnout Paradise Remastered will be on EA Access starting tomorrow (currently also has a 10 hour trial as well).
 
Added the above two games to the OP, plus added Resident Evil 7 Biohazard Gold Edition for $29.99.  The PS4 version of this has a PSVR mode for those that are interested.

The game is easier solo, but most randoms will be playing for the kill. It's just a matter of tactics though since some don't really play well with their given weapons and play too aggressively.

Underlined section is wrong. Difficulty scales up to the same degree, regardless of whether one player joins or three; unless they've changed this in a recent patch as I haven't touched it a couple months, but I don't see them changing this.

 
Also found Rise of the Tomb Raider 20th Anniversary for PS4 at $19.99. It has been that price before but not in the last 6 months, I don't think...
