The differences between the Special Value and the Premium/Limited Edition seem to the the specially designed/branded instruments (ie. you get the snazzy ones with the Limited Edition). The Special Value should be netting you the RB1 instruments.

These are going for ~$160 at FS/BB?

I know this is a good price, but you wouldn't believe the difference in quality between RB1 and RB2 instruments. I'd get the RB2 bundle (still 99$, at EB at least) and then the Beatles game separately. It's worth it, and you'll thank yourself, if only for the drums (I loathe RB1 drums with passion: so noisy/unresponsive!).
 
RB2 drums with rims removed and official silencers added are godly. The pads will never bubble up, and the silencers will lie flush. It's kind of a pain getting the rims off (especially pulling apart the yellow and blue pads), but once it's all finished, it's totally worth the time and effort.
 
I don't know, I use the RB1 set for everything and I haven't had any real issues, though I definitely recommend the silencers.
 
RB1 drums will certainly get the job done, although there are things to consider:

- not wireless
- not velocity sensitive
- bass pedal prone to snapping
- more "clacky" than RB2 drums (although with silencers, this is a non-issue)
- no expansion ports for cymbals

But if none of the above bothers you, by all means go for the RB1 instruments. The RB2 guitar isn't much different from the RB1 guitar anyway, save for an auto calibration feature (which I've actually found to be extremely helpful).

All of my friends with RB1 guitars had to replace them at least once. My RB2 guitar is still holding strong after a year of abuse. I guess you're basically paying 20 bucks for these instruments though, so it's not that bad if they break down in a few months (I know the drum pedal will, at least).
 
I did the nickel mod to increase responsiveness on my RB1 drums. The lack of wireless didn't bother me when I was choosing between getting a RB1 or RB2 kit...mainly cause I didn't want to bother with batteries. I haven't abused my stuff, so they're still strong after a year (though my RB guitar's accelerometer was pretty much DOA), haha. Paranoid about the pedal though...
