How do you move folders under you start menu around?

With previous versions of windows all I did was cut and paste things where I wanted them.

For example if I wanted Civ IV and Doom both under a games menu in the start menu all I would do is cut and paste them but with XP I don't see the cut option.

I don't like seeing 50 folders when I All Programs in the start menu how do I condense them?

Right-click your Start Button and choose 'Explore'. You can manage your shortcuts from the directory branch it opens up in Windows Explorer.
