I know this has been done to death but usually people ask for favorite bands. I want to find some new music starting with a great CD (rather than a great band). It is possible to release one great one and the rest be shit (although that doesn't necessarily apply to the CDs I listed)...

Here's a few I love:
ON - Shifting Skin
A Static Lullaby - And Don't Forget To Breathe
Hum - Downward is Heavenward
Pearl Jam - No Code
Funeral For A Friend - Casually Dressed and Deep In Conversation
Pavement - Slanted & Enchanted

Def Leppard: Greatest Hits
Bon Jovi: Greatest Hits
Mark Schultz: Both Albums
Michael W Smith: 80's Collection
U2: Mysterious Ways (? I'm blanking on whether that's the name of the album, but it has Mysterious Ways, One, etc. on it)

Jedi Mind Tricks - Violent by Design
Wu-Tang Clan - Enter the Wu
Dr. Dre - The Chronic
Nas - Illmatic
Snoop Doggy Dogg - Doggystyle

That's just rap albums that never get old to me. I'll do rock later.
