Video capture issue / question

So, a while back I bought a Gamebridge, and I've been capturing video for a little while. I noticed, however, that the video output isn't very... good.

I'm capturing some Gamecube footage and I'm noticing some weird crisscrossing artifacts on screen:

Instead of the colors being flat, there's this weird dot pattern there. I'm not sure what's causing it - it could be my S-Video cables, but it could also be the A/V splitter I'm using. I'm not sure. This is mostly noticeable on my Gamecube (using a Performance PS2/GC/Xbox cable), kinda there on my Dreamcast (using a Pelican S-Video cable), and barely noticeable on my PS2 (using official S-Video cables), but it doesn't show up when using RCA cables, or when I'm playing on my TV (but the picture's all blurry and bright that way). So what could be causing it? Can anyone help me out?
