What setting to get the most out of my HDTV on my Xbox?

I've always been playing on 1360 X 768 but I'm not sure if this is the best HD option...

Here's my options they give me.

480P
720P
1080I
1080P
1024 X 768
1280 X 768
1360 X 768

What's the best?

It's fairly obvious that 1360x768 is the native resolution of your television, and therefore the resolution you want.

Choosing something higher would make your television downscale the image, which was likely upscaled to an HD resolution anyway, to your native resolution.

Stick with 1360x768.

1080p is the best. Your native resolution is what you should go with

Sounds like your TV is a 32". I keep the resolution that you're using. Native is best, like the others before me said.

Are you using HDMI? If you are the 360 should automatically select the best setting. Well it did on my TV at least.
