I've spent a while now trying to figure out what the hell a GGC is just based on context, but alas, no luck.

Speaking of GGC's...if I just take the coupon out of one will they accept it or do I actually have to put money on the giftcard and pay with it?

I asked about that and techincally you'd be stealing the coupon if you did that. So yes, you do need to buy the gift card and put money on it to obtain the coupon.
