Can a regular Cat-5 cable from my 360 to my mac suffice as a wireless connection to the internet for Live? If I adjust setting in control panel to set it up for shared internet connection it should work, right????

yes. I do this now. Best way for free wifi and to get around any weird NAT settings from a router. Good luck, if you need any help I'd be happy to support anyone who doesn't buy microsoft's $100 adapter.
