My cats chewed through my headset, I can't find the headset sold by itself in any B&M, and I just bought Karaoke Revolution for my wife. Will any standard headset and mike combo work? I really don't trust third party anything made for the XBOX that isn't made by logitech.

The Plantronics X10 and X20 are excellent headsets, and you can normally find the X10 at CC. I have the X20, and it's a great headset. X10 is an over-the-head design, where the X20 is an in-the-ear-and-clip-to-the-earlobe design.
Though, the plug is 2.5mm, which is the same as a cellphone headset, I did run into some lower volume when using my cellphone headset than my XBL headset.
