I'm really happy to see how many others don't like the genre either! I thought I was in a minority.
Diddy Kong Racing is my favorite racing game ever (by a wide margin...since it has actual single player content). I like Stunt Race FX pretty well. Liked the original F-Zero...and that's about it. I don't even like the Mario Kart games. I blew through both the Gamecube and DS versions in a few hours, and sold/returned both.

I like cars plenty. Mine is supercharged. I find racing as a sport or as a game very dull, though. Whew, run around the track, repeat. Too simple. NASCAR is even worse because not even the track is interesting.
