Once you have gallbladder out, you'll have to be careful about eating fatty foods. With no gallbladder to hold and regulate the bile, when you eat fatty foods, your body will digest them very quickly and send you to the bathroom soon afterward. For some people, it's temporary (~6 months) until their body adjusts and for some, it's permanent.

My GF had her gallbladder removed some time ago, and to this day, if she eats the wrong stuff, it's off to the races. Sometimes it doesn't hit her right away, and while I know I shouldn't laugh, I sometimes can't help but tease her. It reminds me of the Family Guy episonde where Peter has to poop while they're driving and end up stopping at the casino. "Hooooold it! Hoooooooold it!"
I'm semi-lactose intolerant and that's bad enough. I couldn't imagine going through what she goes through.
