You can also use an oven turned to an extremely low temperature, but a food dehydrator is probably best (and can also make dried apple slices, which are great. Granny Smith sprinked with sugar and cinnimon (before drying) are my favorite.)
You'll also amost certainly want some sort of marinade/spices for your jerky. You can find tons of them online with a quick web search, though.
The dehydrators are ok. My friend use ot make it all the time. Have the butcher slice the meat realy thin, then mariante it overnight, then put it int eh machine and a day later you have jerky. Its super easy.,
A dehydrator is certainly the best way. As for slicing the meat, instead of having the butcher do it, you can get an el-cheapo hunk of beef at the grocery store and slice it when it is partially frozen. This makes it much easier to slice. I've also make 'tofu jerkey' by marinating the tofu in jerky-like spices and dehydrating that. It's much better than it sounds, but not as good as the real stuff.
I have both of those products. I make beef jerky once a week, and this particular dehydrator can take 3lbs of beef at a time. I've found that using ground beef and the jerky gun actually comes out better than buying slices of beef. It takes 8-9 hours for 3lbs of ground beef.

Jerky gun? Sweet. Does this kit come with a number of different spices (teriyaki, hot, etc)? Gotta get me some of that.
I like jerky, but I actually like those 'beef nuggets' made by the same people a little more. Is there any way to make those? Basically the beef is still dried and spicy, but a little thicker and more tender.
I make jerky all the time. If you plan on buying a dehydrator, make sure it has a fan in it to circulate the air. It will cut down the amount of time it takes to dry it. I also have the jerky gun. It works really good for just some quick jerky. I prefer the sliced meat over the ground if I have the time to make it.
Here is my recipe for marinating the sliced meat.
1 cup soy sauce
1/2 cup liquid smoke
1/2 cup red wine vinegar
3 cloves garlic, smashed
1 tsp black pepper
1 tsp cayenne pepper
1 tsp onion powder
Mix it up and let it sit for 15 minutes or so. Put the meat in and let it sit overnight for best flavor. This makes enough marinade for about 2 lbs of meat. Just make sure you have enough to cover all of it. Enjoy!
Jerky is always going to be expensive because beef like most things is full of water. But if you want it cheaper you can maranade cheap beef in any sauce, heavily salt it and put it in a behydtrator and you will fresh quite flavorful jerky.
If you've got the space, you might track down an old fridge. My grandpa makes jerky by putting the meat into a an old fridge case in his backyard and starting a fire under it. I don't know the excact process (i'd have to ask), but he makes some good smoked jerky and fish that way...
I am definitely more of a strip (vs. slim jim) kind of guy. Take a pinch and put it between your cheek and gums, sit back and relax. Long lasting beefy flavor.
