I like Street Fighter 2, Samurai Shodown, Street Fighter Alpha 2, Tekken 3, hmm, oh yeah, liked Advanced Variable Geo 2 a lot, not sure if that ever came out here.
 
Keeping in mind that I'm not including wrestling games, here are my faves in random order. Good idea for a thread, OP.

Soul Calibur (Dreamcast) - Best installment in a great series, amazing animation, great weapons and awesome single-player.

Street Fighter Alpha 3 (PSone) - Another great single-player mode, the multiple opponents were fun, and it had an all-star cast.

Bushido Blade (PSone) - Unique in a sea of pretenders. One-hit kills is really how katana fights played out. Loved slicing bamboo.

Mortal Kombat II (SNES) - Arcade-quality graphics with the real fatalities -- back when the gore was both hilarious and satisfying.

UFC (Dreamcast) - The first MMA game. Deep for its time, and realistic graphics. I prefer PRIDE PS2, but that was in 2003.

This is a damn high quality list, but mine differs. I'd have to say

1. Street Fighter II (Arcade)
2. Street Fighter III: 3rd Strike (Arcade) Note: Barely makes the cut, came out in May of '99
3. Marvel vs. Capcom 2 (Arcade)
4. Tekken Tag Tournament (Arcade)
5. Ultimate Mortal Kombat 3 (Arcade)

Preferred version in parantheses (see a pattern?). Not having Alpha 2 on their kills me, but I simply play UMK3 more than Alpha 2 these days.

And remember, kiddies - The arcade version is ALWAYS better*.

* - Except for Soul Calibur and you could potentially argue Street Fighter Alpha 3

UMK3 is the best mortal kombat, especially for multi. Fast paced and has some pretty fun combos. Not balanced whatsoever, though.

I like how similar our lists are minus two games.

The reason why I had SFA2 on there was because how much I played it in the arcade. When that game dropped I had to be at the arcade almost every day playing that game.

I didn't get a chance to play a lot of UMK3 in the arcade. By the time I was interested in playing it more it was already on consoles (SNES/Genesis)

The same goes with Third Strike. The only iteration of SFIII I played a ton of was the first one. This liquor store down the street from the high school I went to had the first SFIII, so I played a ton of that.

Arcade > Everything
 
Ugh, this is impossible.

If we were to do favorites, I'd provide a list.

The only one I can confidently mention on a "best" list would have to be SFII and even that one wasn't "perfect".

It's funny I just found a copy of Bloody Roar II in my old storage unit.

Honorable mention goes to Street Fighter Alpha 2. I really wanted to put it on the list but I couldn't figure out which game I'd take off. I just started playing it when the Anthology came out but I'm kicking myself everyday for not discovering it back in the day.
 
Mortal Kombat II - This game was a big deal when it came out. The first time I saw it in the arcade I couldn't believe my eyes. Changed my life.

Capcom vs. SNK - The reason I got a D in English 1102.

King of Fighters 96 - It freakin rules, extra hard.

Street Fighter III - Ibuki FTW!

Tekken 2 - It doesn't get any better.

Killer Instinct (I STILL want an arcade perfect port of this game for a home system)

Honorable mentions to MKII and III, Tekken 3, Samurai Showdown II, and DOA 2. I still love stuff like Vampire Savior and Vampire Hunter, but they weren't the deepest or most balanced games out there. And I've never been a real big fan of the tag games.

Garou: Mark of the Wolves
-the game is beautiful and fairly deep. I can just play this game for hours.

Capcom vs SNK 2
-best of both worlds in an all out slugfest. I just love how deep this fighter is.

Street Fighter III: Third Strike
-I suck but I aspire to be better. I play this with my brother any chance I can get.

Project Justice
-The favorite fighter amongst all of my friends. Over the top action makes this fighter a must play at every gaming get-together

Power Instinct: Matrimelee: I just love this game because of the humor. I prefer the Neo-Geo version over the PS2 import.

CvS2 was after 2000 globally, but I don't care to look anything up so you're probably right.

Zew, Tag was in 99 arcades if I'm not mistaken, so I'll definately revize my shit soon. Probably tomorrow.

How about King of Fighters 98 and Marvel vs Capcom 2.

Project justice was released in the ass end of 2000.;)
