I use the ivyskin version for the iphone but they make a full line and as I found out amusingly the other day works just fine even with a screen protector on http://www.ivyskin.com/ipod-touch-2g?SID=d0936380511d6482dad8a18ef6abd30c Also if I remember correctly they had pretty good warranty coverage for the cases
I really like Switch Easy. They make the best cases and they come with a screen protector, universal dock adaptor and anything else you might need. I have a case for my iPod Classic and my iPhone by them. Great quality cases. http://www.switcheasy.com/

is the ivyskin touch thru hard case thinner than the one i show? seems like it
I like the Incase Slider. I also use a Sena UltraSlim pouch (it's really nice napa leather) when I feel like ditching the case. I'm one of those people that hates bulky cases and especially hates those silicon rubber sleeve abominations.
The rubber texture gives it a good grip and fits well so that your iPod touch won't slip out. It's also got raised rubber so that you can still use the volume and screen buttons.
Since it doesn't cover the screen, I'd recommend buying a good screen protector on Amazon as well.
Of course, if you're looking for a hard shell (plastic) case, then you're better off looking elsewhere but the Pixelskin is what has worked for me.
