Excel columns and rows pretty much go on forever. You just use the ones you want. It knows to only pay attention to ones with data. There is no way to "change the titles" of the row/columns, they're always lettered and numbered so that excel can perform calculations on them.
Create a header row by putting your labels in row 1, columns a-d. any formulas you apply can be targeted to rows 2+.
There's a border tool. You can use it to make the interior grid, heavier lines for table borders, etc. it's up by the color changing buttons on the toolbar.
