The thing that's confusing is the early estimates were Aug for Jasper. But,.. they were revised for Sept a little while back. So I can't tell if the early estimates were more accurate or if, like you suggest, the 60GBs will be Falcon too for a month or 2.

Right, looking at past MS history we have seen model changes, whether it be hard drive or otherwise, have never matched up to actual CPU/GPU revision changes. Even the Elite which was the first model to add HDMI and required an entirely new motherboard was 90nm CPU/GPU for the first few months and remained so for a bit longer than the Premium as you noted. In this case, the Jasper motherboard will likely be exactly the same in terms of form factor as the Falcon motherboard, just like the Xenon HDMI was the same as Falcon in terms of form factor. This is so they can continue to use the same cases. And, with the 360 having detachable hard drive and universal color scheme, it is cheapest and easiest to just stick a 60GB hard drive on whatever Premium rolls out of the plant.
Plus, as I said earlier, Falcon has proved reliable; in fact, reliability is what Falcon was designed for as evidenced by the much beefier heatsink on the GPU. Jasper is a cost saving measure since 65nm is cheaper to produce and cheaper to cool due to less expensive heatsink needed. With that in mind, while you are guaranteed a GPU that generates less heat and costs less money with Jasper, you are not guaranteed a GPU that runs cooler. i.e. what happens if MS decides to go back to something similar to the original 90nm GPU heatsink for Jasper GPU and it causes problems? Jasper has no track record so we can't guarantee it will be reliable. Looking at the 65nm Falcon CPU, the CPU clearly has a less beefy heatsink than the original 90nm CPU heatsink - odds are the 65nm Jasper GPU will have a less beefy one than the 80nm Falcon GPU.
So, I wouldn't stress that much about it. Either way you will get a reliable console w/ 3yr warranty against RROD. And, you are probably best buying the 2yr extended warranty on top of that for other things because no CPU/GPU combo is going to save things like drive failure which is always common in game consoles.
