Soul Edge. The more popular sequels were decent but none of them matched the music of the first game. The Halo games and Castlevania SOTN are solid as well.

For old school stuff, the three Ninja Gaiden NES games are unbeatable. Super Metroid is good, as are the NES Castlevania games.

1) Einhander
2) Dracula New Classic (Orchestra versions of Classic Castlevania music)
3) Final Fantasy IV
4) Secret of Mana
5) Final Fantasy Tactics
6) Final Fantasy VI
7) Castlevania Symphony of the Night
8) The Elder Scrolls 2 - Daggerfall. You HAD to have a wavetable MIDI card to really get the most out of it though. Arena was great too.
9) Diablo - Not much, but man... great stuff. Too bad 2 was so... generic comparitively
10) Unreal Tournament '99 - Some great, timeless techno music in there

Oh, and Mechwarrior 2, and MW2 Mercenaries soundtracks. Timeless, TIMELESS stuff.

A lot of others I love too, but gotta draw a line somewhere. Good thread.

EDIT - WAIT WAIT, yes, ActRaiser. GOTTA AGREE THERE. BRILLIANT STUFF! Loved his work in Etrian Odyssey as well!!!
 
Most everything has already been mentioned, so I'll just add one you wouldn't usually think of:

Fable. Seriously, I just downloaded some of those dev diaries on XBLM, and realized the music in Fable is quality.

I was waiting for someone to say Streets of Rage 2. A master was at work with that game. DJ's could play that stuff now at the club and nobody would notice.
 
The new Alone In the Dark game. The game sucks but the soundtrack is awesome. I also own the original Halo soundtrack. Which I also enjoy alot.
