What about when he's facing right in the original NES game? It's just a flip of the sprite for when he's facing left, so the sword and shield switch hands. So technically he was right handed 1/4 of the time originally.

Technically they can. The fact that they keep selling their games at such high prices probably means they've done the math themselves and expect to make more money by selling fewer copies at higher prices than they would by selling many copies at lower prices.
