Also, what exactly can you do with more than 1 set? I'm wondering if I shouldn't just keep the 3rd set. Can you use 3 at once? How does the play work in multiplayer (I've only ever tried the single-player in-store demos)? Or will 2 be sufficient? I have 3 little kids, though the youngest wouldn't do much more than bang the hell out of them

The multiplayer is either cooperative, with a line of the song for each set of bongos, or head to head, where it's a competition to score the most points.
I have 4 sets (the last one came from picking up DK1 for $25 after GGC & selling the game for $15), and they're lots of fun to use in multiplayer, and it's the real draw of the game.
I do recommend the GC extension cables for 'em, since the cables end up being a bit short to move back from the TV too far.
