Armada (DC) A very deep and fun game, especially with two or more players. A sequel is scheduled to hit in Nov., but the combination of a paucity of information and constantly changing release dates and system changes (it was originally going to be on the DC) does not sound promising. However, should it be released, and it is only a slight improvement over it's predecessor, it would still be worth checking out.
Also, Tiger Woods from 2003 on, though this series is starting to get popular, so probably no longer under aprreciated.
Virtua Fighter is another really good series that, while a huge hit in Japan, never caught on in this country. Not as flashy as DOA, and not as popular as Tekken, but remains the best 3-d fighting engine ever. It's simple enough to pick up and play, yet deep enough to reward mastery. The character balance is near perfect, if you know how to use your fighter. Also, the combos make sense, and are not just long strings of memorization, like Tekken, MK, and many other fighters.
Armada was pretty cool. I definitely enjoyed it.
Virtua Fighter is definirely underappreciated. it's the deepest 3D fighter ever made. I'm still amazed that people bother with Tekken, when VF is an option.
