mykevermin, understand this situation with demos:
The Lair devs just said themselves that they hope to get a demo ready before release, but admit it might not be until after release. Reason is they are working their hardest to make sure the game makes the August 14th deadline, and that's their main focus for now. If they finish before hand, it may come before release; otherwise it may be on hold. It's being said Heavenly Sword demo is finished, but needs to go through SCEA testing before being released. Most all SCE games will have demos, but it's mostly a matter when (MLB 07 The Show didn't get one because once they finished the PS2/PSP version, they had to port the game to PS3 and get the game out as soon as possible). Sony is NOT sitting on tons of demos they're just waiting to release, like many seem to think.
As for third party demos, the situation is interesting. Most exclusive third party games have a demo, or games which PS3 was the lead platform (like Armored Core 4, Virtua Tennis 3). Most multi-platform games don't due to PS3 not being the lead platform. If a game starts out on 360 and when its finished, the game is then ported to PS3 and released. During the porting process, a 360 demo is made (while PS3 usually doesn't get one because the game was finished later). Also, if a third party has a choice between making a 360 or PS3 demo, they will go for 360, because they can reach a larger market right now.
Also, to somewhat repeat your question, some third party devs have a choice of delaying a game to produce a demo, or released the demo after the game. Due to demands of a publisher, the game comes out before the demo. A publisher is perfectly fine if a game sells a few weeks later (at full price), as long as people are buying it.
